Dating back to 1976 Ubriaco Classico was the first of affineur Antonio Carpenedo's creations. Semi hard pasteurised cow's milk cheese refined in Raboso red wine. The aroma of the cheese evokes wild blackberries and cherry notes. The taste is quite gentle with a fruity and tangy finish. Among the many awards won by this cheese we have a bronze medal at 2015 World Cheese Awards.

Born in 1982, this Ubriaco is made in Veneto, home of Prosecco wine.

The cheese is made following several meticulous steps involving soaking the whole wheels in prosecco wine and pomace and letting it dry to start again.

The result is a raw cow's milk cheese with a minimum of 4 months ageing with fresh and floral notes combined perfectly with the delicate flavour enhanced by hints of citrus fruit and green apple.

Among the awards won by this cheese we have a Supergold at World Cheese Awards 2016 and a Gold in 2017.

Desiderio Di Tartufo translates as Truffle Desire. Four months old pasteurised goat's milk cheese with black truffle flakes, refined with Glera (Prosecco Grapes). Caciocavallo litteraly means "cheese on Horseback" referring to the italian tradition of tiying cheeses in pair with a rope and let them to dry and to mature placing them "a cavallo", i.e. straddling, upon horizontal stick.

Mainly made in the southern italy, this is a raw cow's milk cheese aged for a minimum of 3 months.

It's a pasta filata, (stretched curd) cheese.

It has a medium intensity flavour with a light piquant bite and a clear fruity notes of wine.
